The Dash Diet plan is proven to lower blood pressure and cholesterol. But this chili is also delicious, filling and easy to make. It’s named because it piles on the vegetables, which also makes it low in calories.
Ingredients:
· 1 lb ground sirloin, 95% extra‐lean (or use ground turkey if preferred)
· ½ bag frozen onions and green pepper combo
· 2 or 3 garlic cloves, minced or squeezed through a garlic press
· 14 ½ ounce can diced tomatoes, no salt added
· 15 ounce can tomato sauce, no salt added
· 15 ounce can kidney beans
· 1 can black beans
· 2 tablespoons chili powder
· 2 tablespoons paprika
· ½ bag frozen mixed broccoli, cauliflower and carrots
· 1 cup frozen corn
Directions:
1. Heat a soup pot over medium‐high heat.
2. Add ground beef, cook 3 minutes, then turn down the heat to medium.
3. Add peppers/onions and garlic. (High temperatures make garlic turn bitter and brown.)
4. Continue cooking about 5 minutes more, or until thoroughly browned and onions are soft.
5. Add tomatoes, beans and seasonings. Mix well;
6. Allow to simmer about 5 minutes. Then add mixed vegetables and corn.
7. Simmer 30‐60 minutes. If chili starts getting really thick, you could add water or more tomato sauce.
Yields twelve 1‐cup servings.
